RENDANG



Rendang is a spicy meat dish which originated from the Minangkabau ethnic group of Indonesia, and is now commonly served across the country. One of the characteristic foods of Minangkabau culture, it is served at ceremonial occasions and to honour guests. Also popular in Malaysia, Singapore, Brunei, the southern Philippinesand southern Thailand, rendang is traditionally prepared by the Indonesian community during festive occasions. Culinary experts often describe rendang as: 'West Sumatra caramelized beef curry'. In 2011 an online poll by 35,000 people held by CNN International chose Rendang as the number one dish of their 'World’s 50 Most Delicious Foods' list.

Rendang has a respectable position in the Minangkabau culture. Rendang has its own philosophy for the Minang people of West Sumatra, the deliberation and consensus, a set of four basic ingredients that symbolize integrity Minang society, namely:
Dagiang (beef), is a symbol of "niniak Mamak" (indigenous tribe leaders)
Karambia (coconut), is a symbol of "Cadiak Clever" (the intellectual)
Lado (chili), is a symbol of "Ulema" a spicy, assertive law to teach religion
Cookers (spice), a symbol of Minangkabau society overall.
In Minangkabau tradition, rendang is a dish that must be served in each special event, such as a variety of Minangkabau traditional ceremonies, receptions, or welcome guests of honor.
In Malay tradition, both in Riau, Jambi, Medan or the Malay Peninsula, rendang is a special dish that was served in a circumcision feast, birthday, wedding, litany, or a religious event, such as Eid al-Fitr and Eid al-Qurban.

DENDENG

Dendeng Minang or Jerky is meat that is cut into thin flakes are fat trimmed, seasoned with tamarind sauce, salty or sweet with dried on low heat or marinated and dried. The result is a salty meat and semisweet and do not need to be stored in the refrigerator. Jerky is an example of preserved foods.
